Lentil Stew

Serving Size: 1 cup

Serves: 10

Ingredients
  • 2 teaspoons olive oil
  • 1 large onion, chopped
  • 1 teaspoon garlic powder
  • 1 package (16 ounces) carrots, frozen, sliced
  • 1 package (16 ounces) green lentils, dry
  • 3 cans (14.5 ounces each) diced tomatoes
  • 3 cups water
  • 1 teaspoon chili powder
  • 1 teaspoon thyme, dried
Materials
  • Large pot
  • Mixing spoon
  • Measuring cups
  • Measuring spoons
Steps
  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion and cook for 3 minutes, or until tender.
  3. Stir in garlic powder, carrots, lentils, tomatoes, water, chili powder and thyme.
  4. Simmer, uncovered, for about 20 minutes or until lentils are tender.
